Peanut Noodle Salad

package (8 oz) lo mein noodles
1/3
cup reduced-fat peanut butter spread
1/4
cup reduced-sodium soy sauce
1/4
cup orange juice
1/4
teaspoon ground red pepper (cayenne)

medium carrots, shredded (2 cups)

large red bell pepper, cut into 1/4-inch strips

medium green onions, sliced (6 tablespoons)

cup dry-roasted peanuts
  • 1 Break noodles into thirds. Cook and drain as directed on package. Rinse with cold water; drain.
  • 2 In small bowl, mix peanut butter, soy sauce, orange juice and red pepper until smooth.
  • 3 In large bowl, toss noodles, peanut butter mixture and remaining ingredients.

This was so yummy! We forgot to add the peanuts so next time I definitely will. I thought the cayenne gave it a nice little kick at the end to counteract the sweetness of the sauce. Next time I will also try it with more veggies. Definitely a keeper.

Very good, but a little sweet. Next time I'll make it with whole wheat noodles and pack it with more veggies. Still pretty good!

Easy dish, great taste. I added bean sprouts and peapods to the veggies. I also used some orange zest with the orange juice. YUMMY!
