Pasta with Roasted Garlic Pecan Green Beans

cup fresh green beans, trimmed and cut into 2" pieces

garlic cloves, minced
1/4
cup chopped pecans
1/4
teaspoon salt
1/4
teaspoon freshly ground pepper

tablespoons extra virgin olive oil

pound uncooked penne pasta
1/2
cup chicken broth
1
tablespoon unsalted butter
1/4
cup freshly grated Parmesan cheese
3
oz diced pancetta or 3 bacon strips, cooked
  • 1 Preheat oven to 400 degrees F. Bring a large covered pot of water to a boil.
  • 2 Combine green beans, garlic, pecans, salt and pepper in a bowl. Drizzle with oil and stir until coated. Place green bean mixture on a large rimmed baking sheet and roast 13-15 minutes, stirring twice during roasting.
  • 3 When water comes to a boil, remove lid and add a teaspoon of salt. While green beans are roasting, cook pasta following package directions. Drain and return to pot. Add green bean mixture to pasta pot and stir in broth, butter, cheese and pancetta. Serve immediately.
