Papaya-Spinach Salad

Dressing

tablespoons lime juice

tablespoons honey
2
teaspoons vegetable oil

teaspoon grated gingerroot or 1/4 teaspoon ground ginger
Salad

cups bite-size pieces fresh spinach
1/2
cup julienne strips jicama
1/2
cup sliced radish

medium papaya or mango, peeled, seeded and cut up

tablespoons sunflower nuts
  • 1 In tightly covered container, shake all dressing ingredients.
  • 2 In large bowl, toss dressing and remaining ingredients except nuts. Sprinkle with nuts.

Prep time significantly more than indicated in the recipe – lots of cutting required. Dressing is very good and received lots of compliments at the dinner table. My two children did not enjoy the salad (the raddish and jicima were not a hit). Both my husband and I really enjoyed this dish. Need to figure out a trick to cutting papaya (what a pain in the neck).
