large russet potatoes, sliced into 1/4-inch-thick lengthwise strips

egg white, lightly beaten
1/4
teaspoon paprika
1/8
teaspoon salt
1/8
teaspoon pepper
  • 1 Heat oven to 400°F. Coat baking sheet with cooking spray.
  • 2 Brush potatoes with egg white. Sprinkle with paprika. Bake about 20 minutes, or until fries are nicely browned. Season with salt and pepper.

I used a sweet potato and put them on parchment paper, so there was no added oil. They were about 1/4" thick and came out perfectly done in 20 minutes. If you want a little crispy, then leave in a bit longer.

I made these as specified and we enjoyed them very much. I possibly cut some of them too large so some were kind of soggy (I think a french fry cutter would solve that problem). I think next time perhaps I'd add a bit more seasoning- not any more salt- maybe more pepper or something else like garlic or a VERY light dusting of parmesan or fresh herbs.
