pounds dried navy beans (4 cups), sorted and rinsed

large onion, chopped (1 cup)
  • 1 Place beans and 10 cups water in 6-quart Dutch oven. Heat to boiling over high heat; reduce heat to low. Cover and simmer 2 hours. Drain and discard liquid.
  • 2 Mix beans, 3 cups water and remaining ingredients in 4- to 5-quart slow cooker.
  • 3 Cover and cook on Low heat setting 10 to 12 hours. Beans will hold on Low heat setting up to 1 1/2 hours; stir occasionally.

Expert Tips

To cut down on chopping time, use frozen chopped onion, measuring 1 cup, directly from the package.

For old-fashioned pork-and-beans flavor, add 1 cup chopped smoked ham or 1/2 cup chopped cooked bacon.

Adding 1/2 cup dark beer when cooking the beans in step 2 would give them a rich, tangy flavor.
