cup packed brown sugar

cup butter or margarine, softened

cup canola oil

teaspoon vanilla

cup all-purpose flour

teaspoon baking soda

teaspoon ground cinnamon

teaspoon salt

cups old-fashioned or quick-cooking oats

cup raisins
1/3
cup chopped nuts
  • 1 Heat oven to 375°F. Grease cookie sheets with shortening or cooking spray. In large bowl, beat granulated sugar, brown sugar and butter with electric mixer on medium speed until light and fluffy, scraping bowl occasionally. Beat in vanilla and egg until well blended. On low speed, beat in flour, baking soda, cinnamon and salt until well combined, scraping bowl occasionally. Stir in oats, raisins and nuts.
  • 2 Drop dough by rounded teaspoonfuls 2 inches apart onto cookie sheets.
  • 3 Bake 7 to 10 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets.

Expert Tips

Stop the raisin rut! Why not use another dried fruit? Try dried blueberries, cherries, cranberries, chopped dates, apricots or figs, or even dried mixed fruit.

I just made these cookies and they are fantastic! I added a scant more salt and they are perfectly sweet/salty! I'll definitely be making these again because I'm sure my husband will eat them all!
