bag (10 oz) Cascadian Farm® frozen organic harvest berries, thawed and drained

cup real maple syrup
Pancakes

cup quick-cooking oats
3/4
cup Gold Medal® whole wheat flour

cup fat-free (skim) milk

tablespoon sugar

tablespoons vegetable oil
2
teaspoons baking powder
1/4
teaspoon salt

  • 1 In 2-quart saucepan, cook topping ingredients over medium-low heat, stirring occasionally, until mixture just begins to simmer. Remove from heat; set aside. In medium bowl, beat pancake ingredients with wire whisk until blended.
  • 2 Spray griddle or 10-inch skillet with cooking spray. Heat griddle to 375°F or heat skillet over medium heat. For each pancake, pour slightly less than 1/4 cup batter from cup or pitcher onto hot griddle.
  • 3 Cook pancakes until puffed and dry around edges. Turn; cook other sides until golden brown. Serve with topping.

I made these for the first time last weekend and I loved them!! They are tasty and the topping is awesome. I froze the leftovers and ate them later in the week. Makes a great quick breakfast for those with little time in the mornings.

I made these pancakes this morning, expecting the worst, since my stringent diet permits me only one grain serving per day, and I didn't want to waste it. I didn't have the berries, so I topped them with 1/2 a banana sliced, and sugar free maple syrup. I substituted Splenda for the sugar in the recipe and they were GREAT!!!! They were very filling, and I think it could be a great Sunday morning treat. I plan to use the idea I read in another review to freeze the extras for another time, but with my husband and family visiting, there were no extras today! Yum!

these were so good! i substituted egg beaters for the egg and applesauce for the oil, and they came out perfect! finally a deliciously HEALTHY pancake recipe. you could definately play around with different fruits for the toppings. excellent!
