cup uncooked regular long-grain white rice
1/3
cup raisins

cups vanilla soymilk or fat-free (skim) milk

tablespoons packed brown sugar

teaspoon ground cinnamon

teaspoons vanilla
  • 1 In 3-quart saucepan, heat ingredients to boiling over medium heat, stirring occasionally; reduce heat to low.
  • 2 Cook uncovered 20 to 25 minutes, stirring frequently, until rice is tender; remove from heat. Cover; let stand 5 minutes.
  • 3 Serve warm or chilled with additional brown sugar and soymilk if desired. Cover; refrigerate any remaining pudding.

Expert Tips

Potassium can blunt the effects of salt on blood pressure. Good sources of potassium include bananas, raisins, tomato sauce and winter squash.

To make Quick Brown Rice Pudding, follow directions above—except substitute 2 cups uncooked instant brown rice for the white rice and decrease soymilk to 3 cups. Heat all ingredients to a rolling boil. Cover; reduce heat to medium-low and simmer 10 to 12 minutes or until most of the soymilk is absorbed and rice is tender. Remove from heat; let stand 5 minutes.

I would cook this in a rice cooker/steamer and use Splendra Brown Sugar to further lower the calories. I would cook this as is but on occasion I would omit the milk and vanilla and when it is done, I would add different flavors of fat free yogurt to it to give it a little kick: vanilla, lemon, blueberry, strawberry and so on. In my family we've always had hot rice as a cereal for breakfast and for snacks so adding different flavors to it like many people do to their oatmeal is old hat to us. Just remember if you are going to add a flavor that doesn't go well with brown sugar to use Splendra white granulated sugar. My life partner is diabetic, I watch calories, and so we use Splendra. This recipe is very adaptable and I am glad it was posted. Ila in Maine

This rice pudding is delicious. I can not have dairy products, and this desert fit the bill. It is absolutely delicious hot or cold. I followed the directions as is and it turned out great. I hightly suggest trying it because it is so easy to make!
