cups vegetable broth or Progresso® chicken broth (from two 32-oz cartons)

small zucchini, chopped

cup Green Giant® Valley Fresh Steamers™ frozen cut green beans

cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn, thawed

teaspoon grated lemon peel
1/2
teaspoon dried rosemary leaves
1
teaspoon dried Italian seasoning
1/2
teaspoon salt
1/4
teaspoon freshly ground black pepper

can (14.5 oz) stewed tomatoes
1
can (15 or 19 oz) Progresso® cannellini beans, drained, rinsed
1
can (19 oz) Progresso® red kidney beans, drained, rinsed

tablespoons chopped fresh basil leaves or 2 teaspoons dried basil leaves
  • 1 Heat oil in large saucepan over medium-high heat. Add the onion and cook, stirring occasionally, for 5 minutes, or until soft. Add the garlic and cook for 1 minute.
  • 2 Stir in the broth, zucchini, green beans, corn, lemon peel, rosemary, Italian seasoning, salt, and pepper. Heat to boiling. Reduce heat to low, cover, and simmer for 10 minutes, or until the vegetables are tender.
  • 3 Stir in the tomatoes (with juice) and beans. Simmer, covered, for 30 minutes. Stir in the basil.

Expert Tips

Kidney beans are especially good in simmered dishes where they absorb the flavors of seasonings and the other foods with which they are cooked.
