cups uncooked radiatore (nugget) pasta (6 oz)
1/2
cup shredded reduced-fat Colby-Monterey Jack cheese blend (2 oz)
1/4
cup sliced ripe olives
1/2
cup fat-free (skim) milk
1
small red bell pepper, chopped (1/2 cup)
1
can (4.5 oz) Old El Paso® chopped green chiles, drained
Chopped fresh cilantro, if desired
  • 1 Cook and drain pasta as directed on package. Return to saucepan.
  • 2 Stir remaining ingredients except cilantro into pasta. Cook over low heat about 5 minutes, stirring occasionally, until cheese is melted and sauce is hot. Sprinkle with cilantro.

Top this Mexican mac and cheese with a little salsa, sliced olives and a dollop of reduced-fat sour cream.

Radiatore is a really fun pasta that kids love, but any medium-size pasta shape, such as rotini, penne or wagon wheel, also works great.

I had quite a few reservations about this dish (seeing as it only uses 1/2c of reduced fat cheese to serve 4 people) and I just have to say this is just random and has nothing to do with Mexico. El Paso is in Texas. OH WAIT THERE IS CILANTRO! The cheese was not enough. Skim milk is not a pasta sauce. Yummy, skim milk and olives... Make this for a Mexican person and see if they'll eat it. My dog wouldn't eat this. When I made this, it felt like a sub-par side dish and not a meal whatsoever. My suggestion would be to make Italian pasta sauces for pasta and save Mexico for its own food. I will never make this ever again, and if I do it will have a french veloute cheese sauce. (not mexican)
