Mediterranean Penne with Sausage

red bell peppers, chopped

small bulb fennel, quartered lengthwise and thinly sliced

large onion, chopped

small eggplant, peeled and cut into small chunks

clove garlic, minced

lb Italian-style turkey sausage, casings removed

jar (25.5 oz) Muir Glen® organic pasta sauce (any flavor)

cups water
2
teaspoons fennel seeds, crushed
1/2
teaspoon crushed red-pepper flakes

oz penne pasta
  • 1 Coat large skillet with cooking spray. Add bell peppers, fennel bulb, onion, eggplant, and garlic. Cook, stirring often, over medium heat 5 minutes, or until fennel starts to soften. Add sausage. Cook, breaking up sausage with back of spoon, 3 minutes, or until no longer pink.
  • 2 Add pasta sauce, water, fennel seeds, and red-pepper flakes. Stir to mix. Cover and reduce heat to low. Cook 20 to 25 minutes, or until vegetables are tender. Meanwhile, cook pasta according to package directions. Place pasta in serving bowl. Top with sauce. Add up to 1/2 cup of reserved cooking water, if needed, for sauce to coat pasta.

Expert Tips

Bell peppers, regardless of their color, provide vitamin C also called ascorbic acid. Choosing vitamin C-rich foods keeps gums and blood vessels healthy.

the sauce was water(I would sugest not adding that 1 cup of water to the sauce). Other than that it was very good. I did not add the pepper flakes, I thought it was already spicey enough without.

We thought this was great! My local grocery store didn't have a bulb of fennel, so I just used more fennel seed. My husband ate it as a soup/stew rather than with the pasta and really liked it like that also!
