can (15 oz) chickpeas, rinsed and drained

plum tomatoes, chopped

roasted red peppers, chopped

small red onion, quartered and thinly sliced

cucumber, peeled, halved, seeded, and chopped

tablespoons chopped parsley

cloves garlic

tablespoons lemon juice

teaspoons extra-virgin olive oil
1 1/2
teaspoons flaxseed oil

teaspoon salt
  • 1 In a large bowl, combine the chickpeas, tomatoes, peppers, onion, cucumber, parsley, garlic, lemon juice, olive oil, flaxseed oil, and salt. Toss to coat well. Let stand for at least 15 minutes to allow the flavors to blend.

Really good and healthy. I did not have red peppers or flaxseed oil and it was still good. I added some feta cheese to mine and it was even better. Great as a side dish. Even my husband and daughter liked it.

This is absolutely amazing. Not a really big fan of chickpeas but this is beyond delicious. Gotta at least try it once!
