Marinated Shrimp with Ginger and Lime

Juice of 2 limes

tablespoon Dijon mustard
1
teaspoon finely grated ginger
1
tablespoon honey
1/4
cup chopped fresh cilantro

medium green onions, white part only, sliced

lb cooked, deveined and peeled extra-large shrimp (16-count size)

cups mixed salad greens, if desired
  • 1 In small bowl, whisk together lime juice, mustard, ginger, and honey. Add cilantro and scallions.
  • 2 Place shrimp in a large, resealable bag. Pour lime juice mixture over shrimp, coating shrimp completely. Let shrimp marinate in refrigerator at least 4 hours, preferably overnight. Serve chilled over a bed of salad greens.

My husband and I enjoyed this recipe very much. I added sliced mango and slided avacado to the top of salad. It did not say to put dressing on the lettuce, but I used the left over marinade to pour on the greens. Delicious!

I made this salad last night for kids and grandkids along with spaghetti and this was a huge hit. So easy to make and the flavors were just wonderful. Hubby wanted more salad even when we had moved on to the next course. Will definately be making many times this summer.
