Maple Pear-Apple Yogurt Parfaits

Blogger Cate O'Malley from Sweetnicks shares a favorite recipe. For a slightly different effect, you can layer the yogurt, fruit and granola, adding a little bit each time, alternating between the items.

2
tablespoons chopped walnuts
2
teaspoons butter
1
medium apple, peeled, cored, and cubed
1
large pear, cored and cubed
1
teaspoon brown sugar
1/2
teaspoon cinnamon
2
tablespoons pure maple syrup
2
tablespons low-fat granola
1 1/3
cups fat-free vanilla yogurt
  • 1 Heat a small skillet on medium heat, add the walnuts and toast until golden, about 2-3 minutes, shaking the pan gently during the toasting so the walnuts don’t burn. Remove the walnuts from pan to plate to cool.
  • 2 Melt butter in same skillet and add apple, pears, brown sugar and cinnamon. Cook until the fruit is soft, about 4-5 minutes. Add the maple syrup and cook until the syrup thickens a bit, approximately 2 minutes. Transfer to plate and cool.
  • 3 Divide the yogurt into four parfait dishes. Top with apple-pear mixture and the granola. Sprinkle with walnuts and drizzle with just a bit of maple syrup. Serve.
