Mango Relish

mango, peeled, pitted and chopped (1 cup)

small jalapeño chili, seeded and finely chopped (2 to 3 teaspoons)

cup finely chopped red onion

tablespoons finely chopped fresh or 2 teaspoons dried mint leaves

tablespoons lime juice

teaspoon salt

• 1 Mix all ingredients in glass or plastic bowl. Cover and refrigerate 15 minutes. Serve with grilled chicken breasts or grilled fish.
