cup uncooked long-grain brown rice

medium green onions, chopped (1/2 cup)

cloves garlic, finely chopped

cup chicken broth

lb uncooked turkey breast slices, about 1/4 inch thick, cut into 3x1/4x1/4-inch strips

teaspoons grated lemon peel

cup lemon juice

tablespoon capers, rinsed, drained

teaspoon pepper

tablespoons chopped fresh parsley
  • 1 Cook brown rice in water as directed on package; drain if necessary.
  • 2 In 12-inch skillet, cook onions, garlic and broth over medium heat about 3 minutes, stirring occasionally, until onions are tender.
  • 3 Stir in turkey. Cook 3 minutes, stirring occasionally.
  • 4 Stir in cooked rice and remaining ingredients except parsley. Cook about 3 minutes, stirring occasionally, until rice is hot and turkey is no longer pink in center. Remove from heat. Stir in parsley.

Expert Tips

To reduce fat, refrigerate the chicken broth before using; the fat will rise to the top and you can remove it easily.
