cup Gold Medal® all-purpose flour

cup milk

tablespoons chopped fresh chives

teaspoon grated lemon peel

teaspoon salt
  • 1 Heat oven to 450°F. Generously grease 6-cup popover pan with shortening. Heat pan in oven 5 minutes.
  • 2 Meanwhile, in medium bowl, beat eggs slightly with wire whisk or fork. Stir in remaining ingredients just until smooth (do not overmix). Fill cups about half full.
  • 3 Bake 20 minutes. Reduce oven temperature to 350°F. Bake 15 to 20 minutes longer or until deep golden brown. Immediately remove from cups. Serve hot.

Expert Tips

Popovers are said to get their name from the fact that as the batter bakes and expands, it "pops over" the sides of the cups. The high proportion of liquid creates steam that leavens the bread. Popovers can be plain or flavored with spices, herbs or cheese.
