tablespoons cold water

tablespoon fresh lime juice

teaspoons unflavored gelatin

oz (half 8-oz package) fat-free cream cheese, softened

containers (6 oz each) Yoplait® Light Thick & Creamy Key lime pie yogurt

cup frozen (thawed) reduced-fat whipped topping

teaspoons grated lime peel
1
reduced-fat graham cracker crumb crust (6 oz)
  • 1 In 1-quart saucepan, mix water and lime juice; sprinkle gelatin on lime juice mixture; let stand 1 minute. Heat over low heat, stirring constantly, until gelatin is dissolved. Cool slightly, about 2 minutes.
  • 2 In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Add yogurt and lime juice mixture; beat on low speed until well blended.
  • 3 Fold in whipped topping and lime peel. Pour into crust. Refrigerate until set, about 2 hours.

I made this and it was delicious but I made it a much healthier way than this recipe. First off, I will NEVER use the Yoplait Light Thick and Creamy Key Lime Pie yogurt. It has all unnatural and unhealthy ingredients: Cultured Pasteurized Grade A Nonfat Milk, High Fructose Corn Syrup, Modified Corn Starch, Nonfat Milk, Kosher Gelatin, Corn Starch, Lime Juice Concentrate, Tricalcium Phosphate, Potassium Sorbate Added To Maintain Freshness, Sucralose (Splenda Brand), Natural And Artificial Flavor, Acesulfame Potassium Yellow #5, Vitamin A Acetate, Blue #1, Vitamin D3. High Frutose is NOT a healthy option of choice and is so bad for you. Plus the dyes and Sucralose another processed and unnatural ingredient is not good for your body. The Yoplait Greek Key Lime Fat Free Yogurt had double the protein and is all natural in it's ingredients in it: Cultured Pasteurized Grade A Nonfat Milk, Milk Protein Concentrate, Sugar. Contains Less Than 1% of: Corn Starch, Lime Juice, Kosher Gelatin, Lemon Juice Concentrate, Pectin, Calcium Citrate, Natural Flavor, Turmeric Extract (For Color), Vitamin A Acetate, Vitamin D3. I also used only the natural Whip topping from Trader Joe's. They have the all natural one with NO Hydrogenated Oils in it. A MUCH heart healthier option instead of the Cool Whip or any other products at the local grocers. Hydrogenated or partially hydrogenated oils are so bad for you. And I used the entire box of Lime Gelatin because the natural Greek Yogurt does not have a lot of sweet taste since it does not have the artificial sweetener, I just mixed a bit more lime juice, naturally squeezed or lime juice in a bottle as well. Letting it sit over night made it much better than just a few hours. It did not stand AS thick but enough to cut it like a pie, just not like the picture showed. Yet, it was delicious and I knew it was truly a HEALTHY dessert with protein and low in fat and all natural. I thought this was a great option to make for a HEALTHY dessert this way!

This was amazing. I actually made it less healthy and used oreo crust (for some added chocolate) and used regular cream cheese & cool whip (we won't like the added artificial sweeteners in the fat-free stuff) and it was amazing. Even my husband, who doesn't care much for Key Lime Pie, LOVED it! I will actually be making this (the unhealthified version) again next weekend for a bridal shower. So good!
