medium onions, sliced

boneless beef arm roast (2 lb), trimmed of excess fat

can (14.5 oz) Muir Glen® organic diced tomatoes with Italian herbs, undrained

cup tomato paste

hoagie buns, toasted if desired

cups shredded mozzarella cheese (8 oz)
  • 1 Spray 4- to 5-quart slow cooker with cooking spray, In slow cooker, place onions. If beef roast comes in netting or is tied, remove netting or strings. Place beef on onions. In small bowl, mix tomatoes and tomato paste; pour over beef.
  • 2 Cover; cook on Low heat setting 8 to 10 hours.
  • 3 Remove beef from slow cooker; place on cutting board. Use 2 forks to pull beef into shreds; return beef to slow cooker.
  • 4 Spoon about 1/2 cup beef mixture onto each bun. Top each with 1/4 cup cheese.

Expert Tips

Spoon the beef over hot pasta instead of serving on buns and top with grated Parmesan cheese for an Italian-style supper.

Place the onions on the bottom of the slow cooker to make sure they’re tender when the beef is done.
