pork tenderloins, about 3/4 pound each

teaspoon olive or vegetable oil

teaspoon salt
1/2
teaspoon fennel seed, crushed
1/4
teaspoon pepper

clove garlic, finely chopped
  • 1 Heat oven to 375°. Spray rack of roasting pan with cooking spray. Remove fat from pork. Mash remaining ingredients into a paste. Rub paste on pork.
  • 2 Place pork on rack in shallow roasting pan. Insert meat thermometer so tip is in center of thickest part of pork. Roast uncovered about 35 minutes for medium doneness (160°).
