cup Bisquick Heart Smart® mix

tablespoons fat-free egg product or 1 egg white

tablespoon water

teaspoon garlic powder

cup diced green or yellow bell pepper

cup chopped onion

cup cut-up cooked chicken breast
1/2
cup diced tomatoes with Italian-style herbs, drained (from 14.5-oz can)

teaspoon Italian seasoning
1/4
cup shredded reduced-fat mozzarella cheese
  • 1 Heat oven to 400°F. Spray 8x4-inch loaf pan with cooking spray. In small bowl, stir Bisquick mix, egg product, water and garlic powder; spread in pan.
  • 2 In 10-inch nonstick skillet, cook bell pepper and onion over medium-high heat, stirring frequently, until tender. Stir in chicken, tomatoes and Italian seasoning; cook until hot. Spoon over batter. Sprinkle with cheese.
  • 3 Bake 20 to 23 minutes or until golden brown; loosen from sides.

Calcium, from dairy foods like milk, buttermilk and cheese can help build bones. Look for low-fat or part-skim varieties of cheese when you can.

Can't find tomatoes with herbs? Use unseasoned tomatoes and sprinkle in your favorite herbs, like Italian seasoning or basil.

it was good, next time I would probably cook the Bisquick first then add the toppings. I might even use less Bisquick

Plenty for 2 people, we had a piece left over. I used turkey instead of chicken, and more cheese than called for. Enough crust just as written, would double the whole thing next time and use an 8x8 pan to have more leftovers.

This recipe was so fantastic!! I like a lot of "stuff" on my pizza so I cut up an entire onion and pepper instead of measuring it out. It was so good even my picky boyfriend liked it. He told me it didn't taste like pizza but it was still awesome.
