Italian Chicken-Lentil Soup

lb boneless skinless chicken thighs

medium onion, chopped (1/2 cup)

medium zucchini, chopped (2 cups)

medium carrots, sliced (2 cups)

cup dried lentils (8 oz), sorted and rinsed

cups Progresso® reduced-sodium chicken broth

teaspoon pepper

cup sliced mushrooms (3 oz)

can (28 oz) diced tomatoes, undrained

cup chopped fresh or 1 tablespoon dried basil leaves
Shredded Parmesan cheese, if desired
  • 1 Remove fat from chicken. In 3 1/2- to 6-quart slow cooker, mix remaining ingredients except mushrooms, tomatoes, basil and cheese. Add chicken.
  • 2 Cover and cook on Low heat setting 5 to 6 hours.
  • 3 Remove chicken from cooker; place on cutting board. Use 2 forks to pull chicken into shreds. Return chicken to cooker. Stir in mushrooms and tomatoes. Cover and cook on Low heat setting about 15 minutes or until heated through. Sprinkle with basil. Serve with cheese.

I omitted the mushrooms because I don't care for them, but otherwise followed exactly. I'm trying to find ways to add more beans to my diet and this one's a keeper! I froze half for later and was just as good, if not better. I might even try without the chicken for a vegetarian soup. Excellent recipe if your looking to add beans to your diet.

I am not really a soup fan, but with my attempt to increase legumes and beans in my family's diet, this soup sounded like something to try. It's easy to make--just chop some veggies and put everything in a Crock-Pot. I used turkey broth left over from Thanksgiving instead of canned broth. This soup was great the night I prepared it, and it was amazingly delicious as leftovers. This may be a result of the extra time the flavors had to mingle.
