Honey-Mustard Chicken Sandwiches

Honey-Mustard Chicken Sandwiches

cup Dijon mustard

tablespoons honey

teaspoon dried oregano leaves

to 1/4 teaspoon ground red pepper (cayenne)

boneless skinless chicken breasts (about 1 1/4 lb)

whole-grain sandwich buns, split

slices tomato
Leaf lettuce
  • 1 Heat gas or charcoal grill. In small bowl, mix mustard, honey, oregano and red pepper. Brush on chicken.
  • 2 Place chicken on grill over medium heat. Cover grill; cook 15 to 20 minutes, brushing frequently with mustard mixture and turning occasionally, until juice of chicken is clear when center of thickest part is cut (170°F). Discard any remaining mustard mixture. Serve chicken in buns with tomato and lettuce.

Expert Tips

Broil these sandwiches on rainy days or when you don’t feel like firing up the grill. Place the chicken on the rack of the broiler pan, and brush with mustard mixture. Broil 4 to 6 inches from heat for 15 to 20 minutes, turning once and brushing with additional mustard mixture.

For a change of flavor, use basil or marjoram instead of the oregano.

Prepare some ice-cold kabobs to serve with these sandwiches. Spear any combination of cut-up fresh fruits with toothpicks or skewers. The kabobs would be great to keep in the fridge for a pick-me-up as the temperature rises. Dipping the fruit in lemon juice will keep it from turning brown while refrigerated.

This sandwich is very good. I mean it's very easy to make and there really isn't much to it. I used some tenders instead of the chicken breast and for my honey I used an orange blossom honey which is very delicious. I also added a couple of sliced of avacado to my sandwich too which added a very nice taste to the already yummy sandwich....I recommend this to anyone who doesn't really have a lot of time or much in their fridge.
