tablespoon vegetable oil

lb lean beef stew meat, cut into cubes

can (28 oz) diced tomatoes, undrained

carton (32 oz) Progresso® beef flavored broth

cups water
1
cup uncooked barley
2
teaspoons dried basil leaves

bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen mixed vegetables, thawed

medium onion, chopped (1/2 cup)
  • 1 In 4-quart Dutch oven, heat oil over high heat. Add beef; cook and stir until no longer pink. Drain off fat.
  • 2 Stir in tomatoes, broth and water. Heat to boiling. Add barley and basil. Reduce heat to low; cover and simmer 1 hour.
  • 3 Add mixed vegetables and onion; cover and simmer 15 to 20 minutes longer or until vegetables are tender.

Expert Tips

Beef is a good source of vitamin B-12. Our bodies need B-12 for energy and to maintain a healthy nervous system.

Cut the meat into about 1/2-inch cubes. This makes it just the right size for eating lots of small meat pieces throughout the soup.

The barley in leftover soup may absorb much of the liquid. Reheat and serve as a casserole or thin it with beef broth or tomato juice to your desired consistency.

I cut the stew meat into little pieces so that it was cooked thoroughly. Instead of the Green Giant Steamers, I used the Birds Eye Steamers and it came out terrific. It was absolutely delicious. My family enjoyed it very much.

The meat could have been a bit more tender. I did use stew meat like the recipe called for but it was kind of tough. Not sure if it was just the way stew meat is or the fact that it would have been better had it cooked longer. Otherwise, this was a very hearty healthy meal, easy to prepare and my kids loved it too.
