1 1/2cups Gold Medal® whole wheat flour
1cup Total® Raisin Bran cereal
2tablespoons packed brown sugar
1tablespoon baking powder
1/2teaspoon salt
1teaspoon ground cinnamon
2eggs, lightly beaten
1 3/4cups buttermilk
2tablespoons cooking oil
2cups unsweetened applesauce
1.In a large bowl, combine flour, cereal, brown sugar, baking powder, salt, and half of the cinnamon. In a medium bowl, combine eggs, buttermilk, and oil. Add to flour mixture. Stir just until combined but still slightly lumpy.
2.Heat a lightly greased griddle or heavy skillet over medium heat until a few drops of water dance across the surface. For each pancake, pour a scant 1/4 cup batter onto the hot griddle.
3.Cook over medium heat until pancakes are golden brown, turning when pancake surfaces are bubbly and edges are slightly dry (about 1 to 2 minutes per side). Serve immediately, or keep warm in a loosely covered ovenproof dish in a 200°F oven for up to 30 minutes. Serve topped with applesauce and remaining 1/2 teaspoon ground cinnamon.
TK Tip: For even more raisin-packed pancakes, add 1/4 cup raisins to the batter.

Really good
These are terrific. I thought they might be really heavy and thick due to the raisin bran, but they really puff up (thanx to the baking powder) and are delicious. The left over batter keeps well for the next day... just thin a bit with milk when ready to use.

Terrific Pancakes
I loved these. They are pancakes, but offer a heartier, more satisfying meal. I do like them better with sugar-free syrup instead of the applesauce though. I will definetly make these again.

Very good pan cakes
I really enjoyed these I made a big batch and froze the left overs in serving size bags. That way I can just microwave them on my busy days. Highly recommended easy to make.

I tried them this morning. They were great. I cut the recipe in half. It worked fine. I really was leary of apple sauce. It was really good with the panckaes.
