makes:6 servings

6boneless skinless chicken breasts (about 5 oz each)
1box (10 oz) Cascadian Farm® frozen organic cut spinach, thawed, well drained
2oz 1/3-less-fat cream cheese (Neufchâtel), softened
1/4cup shredded Parmesan cheese
1/2teaspoon dried basil leaves
1clove garlic, finely chopped
1/4cup fat-free egg product
12stone-ground wheat crackers, crushed (about 1/2 cup)
1teaspoon dried basil leaves
1/2teaspoon pepper
1cup Muir Glen® organic Italian herb pasta sauce
1/4cup shredded mozzarella cheese (1 oz)
1.Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
2.In medium bowl, mix spinach, cream cheese, Parmesan cheese, 1/2 teaspoon basil and the garlic until blended. Spread about 1 tablespoon spinach mixture over each chicken breast; roll up tightly. If necessary, secure with toothpicks.
3.In small shallow bowl, place egg product. In another small shallow bowl, mix cracker crumbs, 1 teaspoon basil and the pepper. Dip each chicken breast into egg product; coat with crumb mixture. Place seam side down in baking dish.
4.Bake uncovered 20 minutes. Pour pasta sauce over chicken; sprinkle with mozzarella cheese. Bake 10 to 15 minutes longer or until thermometer inserted in center of chicken reads 165°F. Remove toothpicks from chicken before eating.
High Altitude (3500-6500 ft): Bake uncovered 25 minutes. Add sauce and cheese; bake 8 to 12 minutes.

Awesome!
These turned out looking JUST like the picture and even more delicious than I thought they'd be. The only downside is that the breading was a little soggy... I might try using triscuits next time for a little extra crunch. But otherwise it was excellent!

good as restaurant!
I have made this 2x now, and it is so delicious, I have added it to my "staples" list. I have not stuffed them though, but I followed the rest of the directions for a delicious restaurant quality chicken parm. Has been a hit!

These are wonderful! They are fancy to serve for guests. They can be made ahead of time and popped in the oven just 1/2 hour before you eat.

I'll admit I am a horrible cook, and rarely trust recipes because i'm sure i'd find some way to mess it up, but I made this the other day, and it was AMAZING!!! DEFINITELY making this again!

A wonderful dish for a night in!
My husband make this last night, and it was wonderful. It's restaurant quality without the price tag and the guilt! I can't belieive its only 290 calories - thank you for dishing this recipe out.

AHHMAZING
it's sooo very yummy i made it for my family and they absolutly loved it. It's good with or without the spinach but truthfully you can barley taste the spinach:)

Nice recipe, but thumbs down ont he spinach
While I do eat my veggies, I did not like the spinach in this recipe; however, I leave it out now. Otherwise, very tasty alternative to the real thing. The real chicken parm is my favorite. Give it a try.

Stuffed Chicken
My daughter who doesn't like chicken but loves spinach loved this recipe!!!!! She even went back for seconds and that in itself was a miracle! I also loved using cracker crumbs for the breading! KUDOS!!!

DELICIOUS!!! This absolutely could be served in a restaurant! I made it for my husband and it turned out my picky kids loved it too! I used bread crumbs instead of wheat crackers. It is fantastic!! I highly recommend it!

This is Great!
This is a great recipe for people watching there weight or anyone else trying to eat smarter and man oh man is it delicious.This is a quick dish that is fast to feed hungry family yet fancy enough to serve at a dinner party.
