Substitution
A 9-oz box of Green Giant® frozen spinach can be used in place of the fresh spinach. Cook as directed on box and drain well, pressing spinach with paper towels to remove excess liquid.

“Healthified” Spinach Dip with Artichokes

Whether party food or family fare, this dip won’t weigh you down. Slimmed down in calories and fat, it boasts much more spinach for an extra punch of vitamins. From eatbetteramerica.

makes:10 servings (1/4 cup each)

4cups fresh baby spinach leaves, slightly packed (4 oz)
1package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
1/4cup reduced-fat mayonnaise
4tablespoons shredded Parmesan cheese (1 oz)
1/4cup fat-free (skim) milk
2cloves garlic, finely chopped
1teaspoon dried basil leaves
1can (14 oz) artichoke hearts, drained, chopped
Baguette slices, if desired
Assorted raw vegetables, if desired
1.Heat oven to 350°F. Spray 1-quart shallow glass baking dish or 9-inch glass pie plate with cooking spray.
2.Place spinach in 2-quart microwavable casserole; add 1/4 cup water. Cover; microwave on High 2 minutes. Drain well, pressing spinach with paper towels to remove excess liquid. Chop spinach.
3.In large bowl, beat cream cheese with spoon until smooth. Beat in mayonnaise, 3 tablespoons of the Parmesan cheese, the milk, garlic and basil until well blended. Stir in spinach and artichokes. Spread evenly in baking dish. Sprinkle with remaining tablespoon cheese.
4.Bake 20 to 25 minutes or until heated through. Serve with baguette slices or raw vegetables.

Dip
Actually it is not necessary to add the cream cheese! I omitted that ingredient years ago. Add a few fresh basil leaves and a little garlic.....use fresh spinach - add artichokes.... and you are good to go.

A package of Hidden Valley Ranch dry drssng adds "zing" to this recipe. I also add some green onions...my kids love it!

Really Good!
I made this dip for my husband and I as a TV snack. For someone who's not into lowfat, he really enjoyed it. I served it with some Pannetinis.

Spinach & Artichoke Dip
My son and his girlfriend introduced me to this dip served as an appetizer in many chain restaurants. I was so happy to see a "healthier" option. Made this for Thanksgiving and it was a huge hit. My husband and son fought over the leftovers. I will definitely make it again.

Delicious
This was such a hit on Thanksgiving, no one had room for turkey !!! Easy, much lower fat than the regular recipe. Best with baked pita chips.

Artichoke Dip
I love this dip and now I can make it and not feel totally guilty. I acutally went on Weight Watchers and a serving 1/4 cup is actually only 3 points. I am deffinately going to try this one. Thanks

Spinach & Artichoke Dip
I had never eaten Spinach & Artichoke dip before my wedding. I loved the dip but I hated all the extra calories. This healthified version not only tastes good, but I don't have to feel bad about eating it, and on top of that: it's a very easy to make recipe.
