makes:6 servings (about 1 1/3 cups each)

1lb extra-lean (at least 93%) ground beef
1jar (16 oz) Muir Glen® organic mild salsa
1cup Muir Glen® organic tomato sauce (from 15-oz can)
1 1/2cups water
2cups uncooked regular or multigrain elbow macaroni
1cup Green Giant® Niblets® frozen corn
1/2cup shredded reduced-fat sharp Cheddar cheese (2 oz)
1.In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
2.Stir in salsa, tomato sauce and water. Heat to boiling. Stir in macaroni and corn. Reduce heat; cover and simmer 12 to 15 minutes, stirring occasionally, until macaroni is tender.
3.Sprinkle with cheese. Cover; let stand 1 to 2 minutes or until cheese is melted.

Surprisingly good
I thought this dish might just be for the kids, but I quite enjoyed it. I replaced the beef with turkey and you couldn’t tell the difference. I also used the multigrain pasta (my new favorite). If you don’t have much time to work over the stove top this is a quick and easy recipe.

Kinda like a mexican hamburger helper. Try adding some refried beans if you want some more kick and to thicken.

My new favorite!
This was great! I used 10oz of extra lean ground turkey instead of the beef and fat free cheese, and I even added 8 oz of sliced black olives. It took off 90 calories!! This was very easy to make.

wonderful flavor!
This recipe was definitely a hit in my family! I used 1 lb of ground turkey that had taco seasoning in it, which gave it that extra kick. I also added a little extra corn because my brother and I love it. We forgot to put the cheese on top but I don't even think it needed it! It's even healthier without it! :)

Delicious!
I made this for my family for dinner one night, and it was a hit! My husband, our 5 year old, and even our 2 year old loved it. It smelled great as it was cooking, and it tasted even better. I made no changes to the recipe. My husband and 5 year old did add extra shredded cheese to their own plates, but even without the extra it was great. Good comfort food, not hard to make, and basic ingredients. We will definitely have this again.

Healthified Mexican Pasta Skillet
My whole family loved this recipe! I never have left overs when I make it! The only thing I do differently is put in a can of rinsed black beans to add some fiber and ground turkeybreast instead of beef. I always use whole grain pasta. Its super yummy!

Mexican Skillet
This was delicious. Kindof like goolash but better with the crunch of the corn. I used canned sweet corn because its cheaper. This is definately going to be a regular dinner at my house!

Very tastey
This was a delicious recipe that even my kids loved, even though the salsa I added was a bit spicy. I used ground turkey and added fresh cilantro at the end with the cheese that gave it a nice added flavor. Very Good!

I just cooked this tonight. The dish was very tasty but, in my opinion, needed more sauce. The recipe calls for 1 cup of tomato sauce ( i used the whole can) and 1 jar of salsa. Also, instead of putting the cheese in the skillet, put all of the pasta in a baking dish, top it with cheese, and put it in the oven for a little bit. Overall, this dish was very tasty and healthy but my only concern was the need for more sauce.

So tasty
This recipe was great! i was very surprised as many low fat versions always seem to be missing something. I added some jalapenos and chili powder to spice it up a bit...served with baked chips and a tablespoon of low fat sour cream! It was great! My husband even liked it!

This was amazing...my family LOVED it. I'd recommend adding some crushed tortilla chips before the cheese to give it some crunch. I love the black bean idea in sub for the meat--will try that next time.

Added taco seasoning to meat and used reduced-fat Mexican blend cheese instead of plain cheddar. Boyfriend LOVED it. Portions were HUGE. Definitely a hearty meal-- totally couldn't tell it had been "healthified".

WOW!!!!
Having been a vegetarian for 30+ years I substituted TVP (texturized vegetable protein) for the ground beef (1 cup dry reconstituted w/1 cup hot water)in the skillet then proceeded w/recipe instructions. It was easy to prepare and excellent. Hot pepper seeds were added by my husband for a spicier taste. He gave it a thumbs up so it will become a favorite in this house:-)

I made for cinco de mayo and my boyfriend and I loved it! The flavors are great. I added some southwestern mix and chili pepper seasoning to spice it up. It is like mexican hamburger helper.

I had a pound of ground turkey that I didn't know what to do with. I logged in to this website & there was the recipe. It is absolutely wonderful!!! I didn't have any tomato sauce so I used a can of tomato soup & it tasted great. We will definately make this one again.

This is an amazing recipe - so very easy and amazingly delicious!!! It makes a huge amount and is very reasonable in cost. The best part is that my tiny 12 year old daughter had five servings and my 18 year old son had four, then ate the leftovers for a bedtime snack! This has NEVER happened to me before with any recipe. My husband and I loved it, too!! Keep these recipes coming!!!

Excellent
Made this for dinner tonight and it was fantastic. Highly recommend this recipe, and add your own twists if you want. I added taco seasoning to the meat and topped it all off with sour cream! This one will fast become a family favorite!
