"Healthified" Lasagna

"Healthified" Lasagna
Recipe Tip
What is “Healthified”?
We've replaced ingredients with great-tasting alternatives to create better-for-you recipes that are just as yummy as the originals.
Health Twist
To reduce the fat, we used extra-lean ground beef, light cheeses and only 1 egg instead of the 2. Basil and a touch of ground red pepper enhance the flavor.

9uncooked lasagna noodles
1lb extra-lean (at least 90%) ground beef
2cloves garlic, finely chopped
1jar (25.5 oz) Muir Glen® organic Italian herb pasta sauce
1/8teaspoon ground red pepper (cayenne)
1 1/2teaspoons dried basil leaves
1egg
1container (15 oz) reduced-fat ricotta cheese
2cups shredded reduced-fat mozzarella cheese (8 oz)
1/3cup shredded Parmesan cheese
1.Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain noodles as directed on package. Place in cold water.
2.Meanwhile, in 12-inch skillet, cook beef and garlic over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain. Stir in pasta sauce, ground red pepper and 1 teaspoon of the basil. Heat to boiling, stirring occasionally. Remove from heat.
3.Heat oven to 350°F. In medium bowl, beat egg slightly. Stir in ricotta cheese and remaining 1/2 teaspoon basil until blended. Drain noodles. Spread about 1/2 cup sauce mixture over bottom of baking dish. Top with 3 noodles, 1 1/2 cups of the sauce mixture, half of the ricotta mixture and 3/4 cup of the mozzarella cheese. Repeat layers once. Top with remaining noodles, sauce and mozzarella cheese; sprinkle with Parmesan cheese. Spray 15-inch piece of foil with cooking spray. Cover lasagna with foil.
4.Bake 45 minutes. Uncover; bake 10 to 15 minutes longer or until bubbly. Let stand 10 minutes before serving.
High Altitude (3500-6500 ft): In step 4, uncover and bake 15 to 20 minutes longer.

I even cut more fat from this recipe. I don't use any oil on my glass baking dish and it does fine. Even though it says Fat Free on the can, it's for 1/3 of a second spray. More sauce is better. I use fat free cheeses except for the Parmesan. You could also try using half fat free and half reduced-fat. I add 10-16 oz. drained thawed frozen chopped spinach and 2 cans mushrooms (no salt added). Sometimes I don't use meat at all. Whole wheat lasagna noodles also make this a healthier dish. I only put the top mozzarella cheese on the portion we are going to eat. Cut leftovers into squares when cold and freeze. When you reheat the lasagna add the cheese at the end to melt and it looks like you have just baked it. You can also freeze cheese so you will have it when you are ready to bake or reheat.

I think this would be great with ground turkey or chicken, you cant even tell the difference. also throw some sun dried tomatos or fresh tomatos for some extra sauce

Lasagna
I made this for my husband and 2 year old. They thought it was great! I used whole wheat pasta noodles and it was awesome. I also used the 1.5 jars of sauce and that was perfect. I will make this again in the future.

Excellent!
My husband loved this recipe and he is not a big fan of italian food. Everyone is right - definitely use more sauce. I used 1 and 1/2 jars of sauce and the lasagna came out moist and delicious!

This recipe was great! We added some extra cayenne for more zip. I recommend freezing any leftovers in a tupperware, separate pieces with wax paper. After a busy day at work, zap into the microwave for 3-4 minutes (uncovered) and you have yourself a meal!

Pretty Good
I liked this. My only complaint is that it was a little dry, so next time I'll add a little more sauce as suggested by others.

Lasagna
This is a really good dish! The only thing my husband said was that it was a little "dry" and I told him it's because it's not swimming in grease!!!!

This is a great alternative to full fat lasagna. We all loved it and will make it now instead of the full fat version. Use whole wheat noodles to make it even healthier!

"Healthified" Lasagna
This is the first lasagna I've ever made; and it turned out really good! Next time I will add more sauce; that is the only thing I would change with this recipe.

I like the receipe, however wish it stated in metric or us household measurements what an actual serving is. Husband loved the meal will do again definitely.

Great, but not for 12
I loved this recipe. The leftovers freeze well. But it is not 12 servings - more like 9 servings at 320 calories each.

I love this recipe. I have already made it several times. i took the suggestion of using crushed tomatoes to make it saucier and then I also use whole wheat lasagna noodles. And it is enough to feed 4 hungry men.

Taste
I always made "mothers" recipe. I tried this out of the blue one day as I was trying to teach my daughter how to cook from a recipe. the only rariation i made was to add some Shitake mushrooms. Excellant aroma, flavor filled, and a true delight!

Healthified Lasagna
This was actually terrific! My husband and kids loved it. The only suggestion was for a little more sauce so I used canned crushed tomatoes for the extra sauce. Just added a little spatini for flavor.
