14.5-ounce cans Muir Glen® No-Salt-Added Diced Tomatoes

tablespoons quick-cooking tapioca

tablespoon grated fresh ginger

tablespoon snipped fresh cilantro or parsley

cloves garlic, minced

teaspoons packed brown sugar

teaspoon crushed red pepper

cups hot cooked whole grain couscous

tablespoons snipped fresh parsley
  • 1 Place chicken pieces in a 3 1/2- or 4-quart slow cooker.
  • 2 Drain tomatoes, reserving juice from one can. For sauce, in a medium bowl combine tomatoes and the reserved juice, the tapioca, ginger, cilantro, garlic, brown sugar, salt, and crushed red pepper. Pour sauce over chicken.
  • 3 Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3 1/2 hours. Skim fat from sauce. Serve chicken and sauce with hot cooked couscous in shallow bowls. Sprinkle with parsley.

Very simple and delicious receipe; I double the amount of crushed red pepper, my family loved it.

I made this dish for a get together last night. Since I didn't have cans of dished tomatoes, I substituted one can of crushed tomatoes and the results were amazing. I served it with brown rice and everyone at the dinner party raved about the complex flavors in the dish. This dish is a winner and so easy to make.
