small onion, chopped (1/3 cup)

cloves garlic, finely chopped

jar (25.5 oz) Muir Glen® organic Italian herb pasta sauce

cups water

tablespoon ketchup

cups (6 oz) uncooked mini-lasagna noodles (mafalda)

cup chopped green bell pepper

teaspoon dried basil leaves

cup shredded reduced-fat Italian cheese blend (4 oz)
  • 1 In 12-inch nonstick skillet, cook ground beef, onion and garlic over medium-high heat for 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • 2 Stir in remaining ingredients except cheese. Heat to boiling. Reduce heat to low; simmer uncovered 10 to 12 minutes, stirring occasionally. Sprinkle with cheese.

This sounds great. I recently made a vegetarian <a href="http://www.paintsandpans.com/2012/04/24/healthy-skillet-lasagna/">skillet lasagna</a> that was delicious too! It has fewer calories, which is nice.

It was okay. I couldn't find the exact noodles at the supermarket so I got lasagna no cook noodles and broke them into pieces. I added 1.5 cups water like the recommended but I covered it while it cooked. I ended up adding another 1/2 cup water and let it cook some more because the noodles weren't quite done so if you can, I would recommend finding the exact noodles. As far as taste, like others said, it's a basic spaghetti and meat sauce in a skillet. Nothing super wowing but quick on a weeknight and better for you than than burgers.

Sooo good! I make this just about every other week! Sometimes I add mushrooms, super easy recipe and the leftovers are great the next day. sometimes i use 35 calorie/slice bread, cooking spray, garlic salt and a little cheese to make homemade garlic bread, just broil for a few min. pairs great with the lasagna skillet!
