cup packed brown sugar

cup peanut butter

cup canola oil

cup Gold Medal® all-purpose flour

teaspoon baking soda

teaspoon baking powder

teaspoon salt

cup peanut butter chips

tablespoon granulated sugar
  • 1 Heat oven to 375°F. In medium bowl, beat brown sugar, peanut butter, oil and egg whites with electric mixer on medium speed until creamy, or mix with spoon. Stir in flour, baking soda, baking powder and salt. Stir in peanut butter chips.
  • 2 Shape dough into 1 1/2-inch balls. Dip tops of balls into granulated sugar. On ungreased cookie sheet, place balls, sugared sides up, about 3 inches apart (do not flatten).
  • 3 Bake 9 to 10 minutes or until light brown. Cool 5 minutes; remove from cookie sheet to cooling rack.

This is the perfect cookie recipe for two because it makes only one dozen cookies. If you prefer more, you can easily double the recipe. Why not try semisweet or milk chocolate chips instead of the peanut butter chips?
