ounces dried whole wheat or spinach fettuccine

teaspoons olive oil

cloves garlic, minced

pound medium shrimp in shells, peeled and deveined (tails left on, if desired)

cup Progresso® reduced-sodium chicken broth
1
cup frozen peas, thawed
2
medium plum tomatoes, finely chopped
1
teaspoon finely shredded lemon peel
1/2
teaspoon ground nutmeg
1/4
teaspoon salt
2
teaspoons chopped fresh Italian parsley
4
slices whole grain baguette-style French bread (optional)
  • 1 Cook pasta according to package directions; drain and set aside.
  • 2 Meanwhile, in a large skillet, heat olive oil over medium heat. Add garlic; cook and stir for 30 seconds. Add shrimp and broth to skillet. Cook and stir for 3 to 4 minutes or until shrimp are opaque. Stir in peas, tomatoes, lemon peel, nutmeg, and salt. Add pasta; toss with vegetable mixture. Heat through.
  • 3 To serve, divide pasta among four shallow soup bowls. Sprinkle with parsley. If desired, serve with bread slices.

I love this recipe. I make it all year around. I did add more lemon as well. I started off using the recipe verbatum a couple of times, then I ventured out and used this as a base. I added different spices and added a few jalepenos to give it a little kick. The family loves it original or my version.

This was really easy to make and tasty! However, I squeezed a whole lemon and added some lemon juice to the broth and more garlic & spices to give the dish more flavor. The pasta soaked up the chicken broth sauce really well to give it a nice flavor.

I enjoyed the fact that it was a non creamy & healthy version of this recipe I could eat and not feel guilty about. I recommend adding lots of garlic to the shrimp for extra flavor. Also a squeeze of lemon over the entire dish before serving. This makes it a bit more flavorful and keeps the calories low. I also added extra parsley which is not only great for you, it adds a nice flavor to the dish as well as looks good :) I will make it again for sure!
