tablespoons light mayonnaise or salad dressing

tablespoons Yoplait® plain Greek yogurt

teaspoon finely shredded lemon peel

teaspoons lemon juice

teaspoon grated fresh ginger

cups small broccoli and/or cauliflower florets

cup finely chopped red onion

cup dried cranberries

tablespoons roasted soy nuts
  • 1 In a large bowl, stir together mayonnaise, yogurt, lemon peel, lemon juice, and ginger. Add broccoli, red onion, and cranberries. Toss to coat. Cover and chill for 1 to 24 hours. Just before serving, sprinkle with soy nuts.

Simply amazing! Crisp, fresh and lively. Served today for an Easter side dish. Everone loved it...and our children didn't even object to the red onions. ( meant to rate 5 star...but not sure what I tapped on this new tablet.)

I love the fact that this is so much more healthy than the original version. But for some reason, it didn't come out quite as good as I had expected. I'm thinking that with these ingredients it might be better to blanche the broccoli, let it chill, and then make the salad.

My husband and I made this salad over the weekend. I've had (and loved) the calorie-laden version of this recipe. I can now whip it up again - healthified. It doesn't quite compare, but this receipe provides a great alternative and guilt-free enjoyment. I will definitely make this again!
