squares low-fat honey graham crackers, finely crushed (1/2 cup)

package (4-serving size) sugar-free lime-flavor gelatin

cup boiling water

container (16 oz) fat-free cottage cheese
1
package (8 oz) fat-free cream cheese, softened
1
container (8 oz) frozen fat-free whipped dessert topping, thawed
Key limes or limes, cut in wedges (optional)
  • 1 In a small bowl, combine crushed graham crackers, butter, and sugar. Press crumb mixture in the bottom of a 2-quart square baking dish. Refrigerate while preparing filling.
  • 2 In a large bowl, combine gelatin and the boiling water. Stir until gelatin is dissolved. Set aside.
  • 3 In a blender or food processor, combine cottage cheese and cream cheese. Cover and blend or process until smooth, stopping several times to scrape sides of container. Whisk 1/2 cup of the cottage cheese mixture into the gelatin mixture. Whisk in remaining cottage cheese mixture until smooth. Fold in whipped dessert topping. Spoon filling over chilled crumb mixture.
  • 4 Cover and refrigerate for 8 to 24 hours or until filling is firm. To serve, cut into squares and top with lime wedges, if desired.

Made this over the weekend, and was very disappointed. Thought it had too much cottage cheese in it, did not even come close to tasting like key lime. Threw it out, what a waste of money on this dessert.

Thank you for this recipe. My family is very into keylime desserts. We did something a slight bit different. With this said, you would need to recalculate the calories and such. First on the crust we switched the 1tsp of sugar with 2 .035oz packages of sweet mate. Then for the filling it was very cheesey, so we only used half the cottage cheese. It was substituted with 2 6oz containers of Weight Watchers Keylime pie yogurt.

I liked it a lot. Hubby (expert on keylime pie) said could be more tart so will add lime juice. I want to make it with lemon. Awesome for those who can't do sugar!
