cup fat-free milk

tablespoons Gold Medal® all-purpose flour

cup refrigerated or frozen egg product, thawed

ounces reduced-fat cream cheese (Neufchâtel), cut up
1
cup low-fat cottage cheese
1
cup shredded sharp cheddar cheese or Monterey Jack cheese (4 ounces)
1/2
teaspoon sugar
1/8
teaspoon ground black pepper
Fresh tomatoes, chopped (optional)
Fresh basil or oregano (optional)
  • 1 Preheat oven to 350°F. In a medium bowl, gradually whisk the milk into the flour until smooth. Whisk in the egg, cottage cheese, and cream cheese (mixture will not be smooth). Stir in cheddar cheese, sugar, and pepper.
  • 2 Pour mixture into a lightly greased 9-inch pie plate. Bake for 45 to 50 minutes or until puffed and golden and a knife inserted near the center comes out clean. Serve immediately. If desired, garnish with tomatoes and fresh herbs.

Made this for Mother's Day brunch along side the Triple-Berry Coffee Cake and both items melded well together. I made this per recipe specifications and it was melt in your mouth goodness. It looks and tastes more like a souffle than a quiche. Delish and easy and I will do this again soon! Maybe add some fresh spinach & bacon bits. YUM.

Wow -- this was SO good! Such a creamy, rich texture. I reduced the Cheddar to 1/2 c to save some fat and baked this in a 8" square dish. It was enough for two adults but I would double and make in a 9X13 for 4 people or more because it is only about an inch thick. Melts in your mouth! Delicious served with a salad and muffins.

I prepared this dish for a nice, hot weather dinner.Followed the receipe, but like the other reviewer, added Truvia for the sweetener. I just used fresh egg white, not the egg product. The result was delish...basil from the garden,side salad, glass of wine, and voila!
