bags (12 oz each) Green Giant® Valley Fresh Steamers™ Niblets® frozen corn

medium red bell pepper, chopped (1 cup)

oz (half of 8-oz package) 1/3-less-fat cream cheese (Neufchâtel), cut into small cubes

cup fat-free half-and-half
1/2
teaspoon salt
1/4
teaspoon pepper

tablespoons grated Parmesan cheese

medium green onions, sliced (2 tablespoons)
  • 1 In 3-quart saucepan, heat water to boiling. Add corn and bell pepper. Cover; reduce heat to medium. Cook 6 to 8 minutes, stirring occasionally, until vegetables are tender. Drain; return to saucepan.
  • 2 Stir in all remaining ingredients except green onions. Cover; cook over medium-low heat, stirring frequently, until heated and mixture is well blended. Spoon into serving dish; sprinkle with green onions.

We like the bright color of the red bell pepper, but you could use green bell pepper instead. If you have fresh chives, go ahead and substitute them for the green onions that are sprinkled on top.

This was delicious! I loved the creaminess. Next time i think i'd add some red pepper flakes or cayenne pepper for a little kick.

I made this delicious side dish on Thanksgiving of 2009. I had twenty-five people in my apartment and this is the dish that left first.Its funny my dad did christmas at his house he made fried corn but he said to make it similar to the dish I made he added red bell peppers.

This was so good I couldn't believe it! And I don't even like creamed corn! It was light yet cheesy and so low calorie for the great taste. I will use this as my "go to" for creamed corn or any corn recipe for that matter. And what a great treat for the kids. Its a veggie in disguise.
