Healthified Chicken Curry with Couscous

large onion, chopped

teaspoons curry powder

cup whole wheat couscous

cups chopped cooked chicken breast (about 12 ounces)

cup Frozen Bagged Sweet Peas

large red sweet pepper, seeded and chopped

cup light mayonnaise

tablespoons bottled mango chutney
  • 1 Lightly coat an unheated large skillet with nonstick cooking spray. Preheat skillet over medium heat. Add onion; cook and stir until onion is crisp-tender. Stir in curry powder; cook for 1 minute more. Add the water and couscous to skillet; bring to boiling. Stir in chicken, peas, sweet pepper, mayonnaise, and chutney; return to boiling. Remove from heat. Cover and let stand for 5 minutes.

I love curry powder, so I added probably close to 1/4 cup. I also like the peppers to cook with the onions and used chicken stock (Kitchen Basics-unsalted) instead of water. Other than that, followed the recipe and this frequents our table!

This recipe was good, except you will probably need to up the amount of spices you put in!! Definitely not enough Indian flavour for me. But other than that is was really an absolutely fabulous dish!

I did change somethings. I could not find whole wheat couscous so i bought peanut couscous. Also I only used a 1/4 c mayo. I also needed more water. I loved it, and so did my boyfriend and he isn't a fan of curry. He had 3 helpings.
