Grilled Herb and Cheese Pizza

cup pizza sauce

(16-oz.) prebaked Italian bread shell

oz. (1 cup) shredded mozzarella cheese
2
cups frozen bell pepper and onion stir-fry, thawed, drained
1
tablespoon chopped fresh basil or 1 1/2 teaspoons dried basil leaves

tablespoons grated Parmesan cheese
  • 1 GRILL DIRECTIONS: Heat grill. Spread pizza sauce on bread shell. Sprinkle with mozzarella cheese. Arrange bell pepper and onion stir-fry and basil over pizza sauce. Sprinkle with Parmesan cheese.
  • 2 When ready to grill, place pizza on sheet of foil or pizza pan. Place on gas grill over medium-low heat or on charcoal grill 4 to 6 inches from medium-low coals; cover grill. Cook 5 to 8 minutes or until cheese is melted.

Expert Tips

Grilling adds a slightly smoky flavor to this easy pizza.

Look for prebaked pizza shells in the deli section of the supermarket.

For a heartier pizza, add cooked meat. Arrange sliced pepperoni, chopped ham or cooked sausage or hamburger on the pizza before the bell pepper-onion mixture.

I love that this recipe uses the frozen bell pepper and onion never thought of that before. The only changes I made was I used a whole wheat pizza crust and a low sodium pizza sauce. I also did half mozzarella and sprinkled some feta.
