Grilled Fiery Pork with Pineapple Salsa

teaspoons canola oil

pork tenderloins (3/4 lb each)

teaspoon black pepper
1/4
to 1/2 teaspoon ground red pepper (cayenne)

teaspoon salt
Pineapple Salsa

can (8 oz) pineapple tidbits in juice, drained

medium green onions, sliced (1/4 cup)
1/4
cup chopped red bell pepper

tablespoons chopped fresh or 2 teaspoons dried mint leaves
1/2
teaspoon grated lime peel

teaspoons lime juice
  • 1 Heat coals or gas grill. Rub 1 teaspoon oil onto each pork tenderloin; sprinkle with black pepper, red pepper and salt.
  • 2 Carefully brush oil on grill rack. Place pork on grill over medium heat. Cover grill; cook 20 to 30 minutes, turning 3 times, until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F.
  • 3 Meanwhile, in medium bowl, stir together salsa ingredients. Cut pork into 1/2-inch slices. Serve with salsa.

This was a great recipe, I added more spice to the pork which was a great contrast to the salsa.
