makes:4 servings

1tablespoon olive oil
3/4lb turkey cutlets, cut into thin strips
2large shallots, thinly sliced
1box (10 oz) cremini mushrooms, sliced
1cup baby carrots, sliced
1clove garlic, finely chopped
1teaspoon hot paprika
1/4teaspoon salt
1cup Progresso® reduced-sodium chicken broth (from 32-oz carton)
2teaspoons tomato paste
2teaspoons Worcestershire sauce
2teaspoons cornstarch
1/3cup fat-free sour cream
1.In large nonstick skillet, heat 2 teaspoons of the oil over high heat. Add turkey; cook and stir 3 to 4 minutes or until no longer pink and just cooked through. Remove to a plate.
2.Reduce heat to medium-high; add remaining 1 teaspoon oil and shallots to skillet. Cook and stir 1 minute or until shallots begin to soften. Add mushrooms and carrots. Cook and stir 4 minutes or until mushrooms soften. Stir in garlic, paprika and salt; cook and stir 1 minute longer. Remove skillet from heat.
3.In small bowl, stir chicken broth, tomato paste, Worcestershire sauce and cornstarch until blended. Return skillet to medium heat; add broth mixture. Cook, stirring frequently, until the sauce thickens and boils. Simmer 2 minutes. Stir in turkey; cool 1 minute longer or until hot. Remove skillet from heat; stir in sour cream.

A tad bland
I don't typically make real deal stroganoffs due to the heaviness of the dish. This is a nice alternative although I was expecting a little more creaminess.

Different but good
I personally dislike most stroganoffs, which always taste like gravy to me, but this I really liked. It is VERY different from a standard stroganoff, but still very tasty and hearty.

I really liked this recipe. It was a lighter version of beef stroganoff. I loved having the carrots in addition to the mushrooms. I served this over egg noodles. My only complaint was that the sauce didn't get very thick. Next time, I'll have to use a little more corn starch.

Savory Turkey Stroganoff
I thought it was a good recipe and I will make it again. My family enjoys Stroganoffs and this I felt was a healthier one to make then some of the others I have made in the past using cream of mushroom soups that have msg in them. It was not hard to make and we all enjoyed it.
