Add a sweet and sour twist to your family’s Mid-Eastern dinner! Serve these delicious kabob packets filled with chicken, bell peppers and pineapple that are steamed on the grill - ready in 40 minutes. From eatbetteramerica.

makes:4 servings
1/3cup pineapple preserves
2tablespoons packed brown sugar
1tablespoon soy sauce
1/4teaspoon crushed red pepper
4boneless skinless chicken breasts, cut into 2-inch cubes (1 lb)
1medium red bell pepper, cut into 1 1/2-inch cubes
1medium green bell pepper, cut into 1 1/2-inch cubes
1cup pineapple chunks
1/4teaspoon salt
1.Heat gas or charcoal grill. In small bowl, stir together pineapple preserves, brown sugar, soy sauce and crushed red pepper.
2.Cut 4 (24x12-inch) sheets of heavy-duty foil. Divide chicken, bell peppers, pineapple chunks and pineapple preserves mixture among foil sheets. Sprinkle with salt. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
3.Place packets on grill over medium heat. Cover grill; cook 6 minutes. Using tongs, carefully turn packets over, taking care not to puncture foil. Cook 10 to 12 minutes longer or until chicken is no longer pink in center and vegetables are crisp-tender.

Amazing
I just made this and it was absolutely delicious. I had to make it in the oven so i needed to adjust the cooking time a bit, and my family requested broccoli so I boiled some on the side and added it in and it was so so yummy. Next time I think I will make rice to go with it too. Otherwise I made it just how it specifies.

Delicious!
We used raspberry preserves rather than pineapple, and canned pinapple rather than fresh. The meal came out great and I highly recommend it :)

DELICIOUS
I made this for dinner and it was VERY DELICIOUS. Its so simple, just copied the recipe but added sweet onion to it...perfection, Believe it.

I just fixed this for dinner tonight and it was so good and easy! I will definitely make again. I love making chicken in the foil packet. It is easy and there is very little clean up.

great recipe!
I made changes to make it diabetic friendly. I sub splenda brown sugar, used sf preserves, and only because of I dont like green pepper I left that out and used yellow

This is so easy to make and so darn delicious! Any time I can substitute fat free in the recipe I do! I used sugarless preserves and it worked very well! I will make this recipe many times over the summer. It is wonderful!
