To cut down on chopping time, use frozen chopped onion, measuring 1 cup, directly from the package.
Variation
For old-fashioned pork-and-beans flavor, add 1 cup chopped smoked ham or 1/2 cup chopped cooked bacon.
Special Touch
Adding 1/2 cup dark beer when cooking the beans in step 2 would give them a rich, tangy flavor.

Old-fashioned baked beans get an irresistible sweet-and-smoky flavor in this slow cooker version. From eatbetteramerica.

makes:20 servings (1/2 cup each)
2pounds dried navy beans (4 cups), sorted and rinsed
10cups water
3cups water
2/3cup packed brown sugar
2/3cup molasses
1tablespoon yellow mustard
2teaspoons salt
1large onion, chopped (1 cup)
1.Place beans and 10 cups water in 6-quart Dutch oven. Heat to boiling over high heat; reduce heat to low. Cover and simmer 2 hours. Drain and discard liquid.
2.Mix beans, 3 cups water and remaining ingredients in 4- to 5-quart slow cooker.
3.Cover and cook on Low heat setting 10 to 12 hours. Beans will hold on Low heat setting up to 1 1/2 hours; stir occasionally.
High Altitude (3500-6500 ft): No changes.
