Rich, smoky, fire roasted tomatoes provide a unique flavor twist in this new version of a classic recipe. From eatbetteramerica.

Start to Finish:40 min
makes:6 servings (2/3 cup each)
1tablespoon olive oil
2cloves garlic, finely chopped
1medium onion, chopped (1/2 cup)
1/2medium green bell pepper, diced (1/2 cup)
1cup uncooked regular long-grain rice
1/4teaspoon coarse salt (kosher or sea salt)
1/4teaspoon crushed red pepper
1can (14.5 oz) Muir Glen® organic fire roasted diced tomatoes, undrained
1 3/4cups Progresso® reduced-sodium chicken broth (from 32-oz carton) or 1 can (14 oz) vegetable broth
1.In 3-quart saucepan, heat oil over medium heat. Cook garlic, onion and bell pepper in oil about 5 minutes, stirring constantly, until crisp-tender. Stir in rice, salt and crushed red pepper.
2.Stir in tomatoes and broth. Heat to boiling. Reduce heat; cover and simmer 20 to 25 minutes or until rice is tender.
High Altitude (3500-6500 ft): Add 1/3 cup water in step 2 with tomatoes and broth.

Excellent
Even though the recipe doesn't mention about how much green peppers to add; common sense would lead you to believe it's the same as the onions...but anyway the rice was Excellent!! This is definitely a keeper.

delicious
made this for my husband who isnt a rice eater but likes spanish rice from box... he loves this side and wants me to make it again... Even the spiciness of did not bother me
