Spice up dinner with a dry rub-seasoned succulent pork dish that's company ready and family friendly. From eatbetteramerica.

makes:4 servings
Pork
2teaspoons canola oil
2pork tenderloins (3/4 lb each)
1teaspoon black pepper
1/4to 1/2 teaspoon ground red pepper (cayenne)
1/2teaspoon salt
Pineapple Salsa
1can (8 oz) pineapple tidbits in juice, drained
4medium green onions, sliced (1/4 cup)
1/4cup chopped red bell pepper
2tablespoons chopped fresh or 2 teaspoons dried mint leaves
1/2teaspoon grated lime peel
2teaspoons lime juice
1.Heat coals or gas grill. Rub 1 teaspoon oil onto each pork tenderloin; sprinkle with black pepper, red pepper and salt.
2.Carefully brush oil on grill rack. Place pork on grill over medium heat. Cover grill; cook 20 to 30 minutes, turning 3 times, until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F.
3.Meanwhile, in medium bowl, stir together salsa ingredients. Cut pork into 1/2-inch slices. Serve with salsa.

This was a great recipe, I added more spice to the pork which was a great contrast to the salsa.

Very light and delicous
This meal was very flavorful and easy to make. I wish I made more of the salsa. Will make it again.
