1lb uncooked fettuccine
2cups whole milk
1tablespoon Gold Medal® all-purpose flour
1/4teaspoon salt
Dash freshly ground black pepper
Dash ground red pepper (cayenne)
2tablespoons butter
2teaspoons finely chopped garlic
2oz 1/3-less-fat cream cheese (Neufchâtel)
2/3cup grated Parmesan or Romano cheese
2tablespoons chopped fresh parsley
1.Cook fettuccine as directed on package, omitting salt. Drain; return to saucepan. Cover to keep warm; set aside.
2.Meanwhile, in medium bowl, stir milk, flour, salt, black pepper and red pepper with wire whisk until smooth. In 2-quart saucepan, melt butter over medium-low heat. Add garlic; cook 1 minute, stirring constantly (do not burn). With wire whisk, stir milk mixture into butter mixture in saucepan. Cook and stir over medium heat 6 to 8 minutes or until mixture thickens and boils.
3.Stir in cream cheese until melted. Stir in Parmesan cheese until melted. Pour over fettuccine; toss to coat. Sprinkle with parsley.
High Altitude (3500-6500 ft): Cook and stir over medium heat 7 to 9 minutes.

I made this with my mom one night when we didn't really have anything to eat. We had all the ingredients in the pantry and fridge so we gave it a go. It was SO GOOD! We added some chopped broccoli and it was really good. The sauce also needed a little more salt, but that didn't bother me at all.

This version was pretty good but it got too thick after it sat out for a bit.. I am used to making it with chicken broth, cream cheese, some spices and Parmesan cheese.. this version is still too unhealthy for my tastes.

Taste great but was a little dry
At first the texture was fantastic...nice and creamy. It seemed like as it settled (10 minutes maybe) it got clumpy and very dry. It didn't really effect the taste but definitely made for a weird texture. I'll make it again, but might remove the flour to try and resolve the dryness.

Kids love it!
My kids are a big fan of the greasy fatty version of the Fettuccine Alfredo and I was afraid that they may hate this recipe. They LOVED IT! I used whole wheat whole grain Fettuccine and it was delicious! Next time I will add some shrimp or chicken. No more old fatty recipe. This is it. Thanks!

garlic
I would skip the garlic, or used roasted. I love carmelized onions so I use those. (Slice onions very thin) I also only buy and use 2% milk. Some grated nutmeg could be used in stead of cayenne--which I would never put in fettuccine. Black pepper is fine. Broc. is a great addition.

fettuccine alfredo
I have been making fettuccine alfredo for a couple of years now. I just tried this recipe and it is much better than the recipe I used previously. This will be the recipe I use from this point forward. If you haven't tried it yet, go for it. It is well worth it and very delicious.

I added some veggies
This came out so tasty, no one could believe it was low-fat! I added a ton of veggies to this too, making it even more healthy and hearty as a main-course meal. I added steamed broccoli and thinly sliced carrots, as well as sauteed mushrooms. Definitely going to make again!

Wonderful
I search all day for a healthy recipe. I was so happy when I found this. I tried it that night and it was great!! The whole family loves it. I'm going to try with chicken and broccoli too. I know it will be great. Thanks!!

Pretty Good!
I thought this recipe was really good. It's like regular alfredo almost! I think I added a little garlic and onion salt to give it a little more flavor. Otherwise I was very pleased with this.

I really liked this recipe and so did my family. I did make some changes to the recipe, instead of whole milk, I used fat free half-half and I tossed in streamed broccoli and chicken at the end.
