Flax, cranberries and walnuts give delicious muffins a boost of omega-3 fatty acids and antioxidants. From eatbetteramerica.

makes:12 muffins
1box (15.3 oz) Fiber One™ apple cinnamon muffin mix
1/4cup ground flaxseed or flaxseed meal
1/3cup sweetened dried cranberries
1/3cup chopped walnuts
3/4cup water
2tablespoons vegetable oil
3egg whites or 1/2 cup egg substitute
1.Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups, or grease (or use cooking spray) bottoms of muffin cups. (For best results, use paper cups.)
2.In medium bowl, stir muffin mix, flaxseed, cranberries, walnuts, water, oil and eggs just until blended (batter will be lumpy). Divide batter evenly among muffin cups (about 2/3 full).
3.Bake 17 to 21 minutes or until golden brown and tops spring back when touched. Cool 5 minutes; carefully remove from pan (if not using paper cups, run knife around edges of cups before removing). Cool completely before storing.
High Altitude (3500-6500 ft): Spray muffin cup liners with cooking spray to avoid sticking. Yield=18 muffins.

Very Good Muffins
These are my very favorite muffins. They have 3 of my favorite foods, Craisins, Flaxseed, and Walnuts.

Very good, much better than the apple bran muffin from Starbucks and cheaper too!! My husband loved them too.

I made these muffins early one Saturday morning and took them to my husband and his co-workers. Not only did they all think they were delicious I scored MAJOR brownie points with the guys. Even got me a foot massage when he got off work! :D Deffinatly recommend!
