Cucumbers and Tomatoes in Yogurt

Vegetables offer a host of nutrients, including vitamins A and C and folate to name a few. Be sure to get at least 3 to 5 servings of veggies daily.
This Indian side dish cools the palate when spicy foods are eaten. Try it as a dip with pita bread wedges or crackers, too. From eatbetteramerica.
Prep Time:10 min
Start to Finish:50 min
makes:4 servings (about 1/2 cup each)

1medium cucumber
1medium green onion, chopped (1 tablespoon)
1/2teaspoon salt
1medium tomato, chopped (3/4 cup)
1tablespoon chopped fresh cilantro or parsley
1/4teaspoon ground cumin
Dash of pepper
1/2clove garlic, finely chopped
1/2cup Yoplait® Fat Free plain yogurt (from 2-lb container)
1.Cut cucumber lengthwise in half; scoop out seeds. Chop cucumber (about 1 1/4 cups). In medium glass or plastic bowl, mix cucumber, onion and salt; let stand 10 minutes. Stir in tomato.
2.In small bowl, mix remaining ingredients except yogurt; toss with cucumber mixture. Cover; refrigerate at least 30 minutes to blend flavors. Drain thoroughly.
3.Just before serving, fold in yogurt. Store covered in refrigerator.

Cool and Refreshing
This is another winner! Very cool, refreshing and tastey! This would be a great summer recipe but is good anytime. Happy Eating!
