Global taste explodes in this terrific wet rub—it’s a little Indian, a little Southwest, a little Latin and very big in flavor. From eatbetteramerica.

makes:4 servings

1teaspoon ground coriander
1/2teaspoon sugar
1/4teaspoon chili powder
1/4teaspoon ground cumin
2teaspoons lime juice
1salmon fillet (1 lb)
4lime wedges
1.Heat gas or charcoal grill. In small bowl, mix all ingredients except salmon and lime wedges. Spread mixture over salmon.
2.Place salmon, skin side down, on grill rack over medium heat. Cover; cook 10 to 14 minutes, without turning, until fish flakes easily with fork. Serve salmon with lime wedges.

I was really excited about this, because it contains all my favorite seasonings. It was good, but it wasn't what I was hoping for. I don't know why either--except the ground coriander made a strange texture, and next time, if I make it again I will use brown sugar, and ad a little more, because the sugar did have a nice bit of carmelization. I think this might be nice on another fish, or on chicken, but I think the salmon is too stong-flavored, and they compete with each other.
