Super Chicken
Chicken contains vitamin B6, also called pyridoxine. Vitamin B6 is important for digesting proteins, plus it helps to keep hair and nerves healthy.
Substitution
Dry sherry can be substituted for the Marsala.

makes:4 servings

1/4cup Gold Medal® all-purpose flour
1/4teaspoon salt
1/4teaspoon pepper
4boneless skinless chicken breasts (about 1 1/4 lb)
2tablespoons olive or vegetable oil
2cloves garlic, finely chopped
1cup sliced fresh mushrooms (3 oz)
1/4cup chopped fresh parsley or 1 tablespoon parsley flakes
1/2cup dry Marsala wine or Progresso® chicken broth (from 32-oz carton)
1.Mix flour, salt and pepper. Coat chicken with flour mixture; shake off excess flour.
2.Heat oil in 10-inch skillet over medium-high heat. Cook garlic, mushrooms and parsley in oil 5 minutes, stirring frequently.
3.Add chicken to skillet. Cook uncovered about 8 minutes, turning once, until chicken is brown. Add wine. Cook uncovered 8 to 10 minutes, turning once, until chicken is no longer pink in center.

Excellent
This is an excellent recipe. I love onions so I add about a cup of sliced vidalias. Cooking with a lid on will keep some of the moisture in giving you more sauce. Great served over a a small portion of linguini pasta.

Good
This recipe was very easy, and very flavorful. I used baby bellas and added double the amount that was in the recipe. I also needed to add just a bit more chicken broth. Very good!

Good, but a little dry.
The whole family loved this, but I prefer a saucier marsala, so I suggest using BOTH 1/2 cup marsala wine AND 1/2 cup chicken broth (low sodium). Also, buy thin breasts or flatten then with a rolling pin/mallet.

Yummy!
I made this using only 1# of chicken breasts, a whole 8 oz. package of mushrooms, sherry in place of the marsala, and the juice of one lemon and it was great served over whole wheat thin spaghetti.

Will definitely make again.
Made a few modifications - used whole wheat flour, doubled the garlic and doubled, almost tripled the mushrooms because I love them. Cut the chicken breasts in half so that they were thinner, more like cutlets, and used chicken broth instead of wine as it's all I had on hand. Came out extremely moist and perfectly tasty for a healthy version of one of my favorite dishes.

Tasty and Easy
This was very easy to make, unlike other chicken marsala recipes I have tried. I used Sherry instead of Marsala and it turned out fine. I do have 1 child that hates mushrooms, so I made the chicken separately from the mushroom sauce and it still turned out wonderfully!

Great Recipe
Very easy and simple to make, didn't need a lot of ingredients and overall I loved it. Didn't have wine so I also added some lemon to give it a little kick.

One Happy Family
I made this recipe for my family the other night and I received rave reviews. For that reason, I must pass the glory on to you. I just started cooking in November and have discovered that I don't dislike it as much as I thought! The kids and my significant other loved this recipe and I will be making it again soon.

Delicious
This recipe was excellent... almost as good as something you would order in an Italian restaurant. After reading the other reviews, I used more chicken broth and mushrooms and added lemon juice. I will be sure to make this again.

New Favorite
We loved this recipe. I followed other reviewer's advice and doubled the sauce ingredients and added some lemon juice to the broth instead of the wine. I served it with whole wheat "egg noodles", tossing fresh broccoli in at the last minute. Next time I will make even more sauce!

One I will make again
This came out so well. The flavors were perfect, it was as good as something in a restaurant. My boyfriend, who is Italian, said it was better than his mother's! And so fast, there was no prep time and cooking was a snap. I made it with whole wheat angel hair and a salad. One change was that I used double the wine (1full cup) and a full cup of water and let it cook longer, more like 15-20 mins. But I had thick chicken breasts. Also, i wanted some of the sauce to be left over to toss with the pasta.

Great Dinner!!
I was very happy with how this dinner turned out. It was easy to make and tasted wonderful. I did not have Marsala wine on hand, so I used chicken broth; it still turned out great. Next time I will try making it with the wine because I know it can only make it even better. I also served this with a small side of whole wheat pasta that I mixed with a little bit of garlic salt, fat free butter, parmesean, and a pinch of black pepper. It was likes by all!
